The Emotions Embedded in Hibiki

This was the dream of Shinjiro Torii, the founder of Suntory, who paved the way for whisky making in Japan. In 1923, Torii embarked on the construction of Japan's first whisky distillery in Yamazaki, on the outskirts of Kyoto. While learning the techniques from Scotland, he began the trial and error process of creating flavors and aromas that suited Japan's climate and environment.
To be accepted by people at the time who were unfamiliar with whisky, exceptional blends that grasped the flow of the times and preferences were essential. Torii created numerous blended whiskies such as "White Label," "Kaku-bin," "Old," and "Royal," constantly honing them to suit the Japanese palate.
It was in 1989 that Torii's second son, Keizo Saji, as the second master blender, created "Hibiki." It was a commemorative year as Suntory celebrated its 90th anniversary. Keizo Saji aimed for the pinnacle of Japanese whisky, gathering the essence of the accumulated techniques and pursuing the ultimate aroma and flavor.
The concept of "people, nature, and harmony" that is Suntory's corporate philosophy was also embedded in "Hibiki." Through whisky making, it expresses the desire to coexist with people all over the world and precious nature.
